HAM & CHEESE TOASTIE
Such a simple combo, but a winner everytime! This is my favourite lunchtime treat.
INGREDIENTS
Serves 1
2 slices of good quality white bread
Knob of butter
1tsp dijon mustard
2 slices of ham of your choice - my favourite is prosciutto (pan fry in a dry pan first if you like it crispy!)
Handful of grated cheese of your choice - my favourite is gruyère or a strong cheddar
METHOD

Set a dry frying pan over medium-high heat. Butter one side of each slice of bread. Flip one slice over and spread over the dijon mustard, followed by a layer of grated cheese, the ham, and finally another layer of grated cheese. Finish with a few twists of black pepper. Place the other slice of bread on top, butter side up (this ensures the bread toasts nicely).

Add the sandwich to the hot pan, squishing it down with a fish slice to help everything melt together. Cook for a couple of minutes each side. You want it nicely browned on both sides, and the cheese inside to be nicely melted.
Cut into triangles and enjoy!
