Hot Chocolate
I am a firm believer that a steaming mug of hot chocolate beats a cup of coffee any day. I am also a firm believer that this homemade hot chocolate knocks all the others out of the park. No powder here - real chocolate only. And it's dangerously easy to make.
INGREDIENTS
Serves 1
240ml milk of your choice (I use oat)
40g dark chocolate (70% cocoa solids is best, if any less, reduce sugar to taste)
1tbsp sugar (or to taste)
1/4tsp instant espresso powder (or coffee granules)
1/4tsp vanilla extract
Mini marshmallows, to serve (optional)
Squirty cream, to serve (optional)
Extra drizzle of melted chocolate, to serve (optional)
METHOD

Place the chocolate in a small saucepan and pour over the milk (I do it this way round to avoid milk splashing everywhere).
Sprinkle over the sugar, espresso (or coffee) and vanilla and give it a quick stir.

Set the saucepan over a low heat, and bring to a simmer, but not to a boil.
Once you have a few bubbles and small wisps of steam coming from the pan, remove from the heat and whisk until all of the chocolate is melted into the milk.

Pour into a mug, top with marshmallows and cream to serve, and perhaps a dusting of cocoa or a grating of extra chocolate if desired.
